Bubble Gum Milkshake Recipe

Big Train Bubble Gum Milkshake Drink

Bubble Gum Milkshake
4 oz milk
12 oz ice cream
2 scoops (80 g) Big Train Kidz Kreamz Bubble Gum
Spindle or blend together

This Bubble Gum Milkshake was a surprise to us. Amazing how it delivers on that nostalgic flavor! Levi Andersen, the in-house barista had this to say: “I was playing around with milkshakes recently and wanted to do something totally different that I had never done before. Spindling a powder into the milkshake base was wonderful!”

All of the Kidz Kreamz flavors work in this recipe. The Bubble Gum works with chunks of fruit or a little DaVinci Gourmet Fruit Innovations syrup as well. What bubble Gum combos have you tried before?

Red Velvet Frappe Blended Drink

Red Velvet Frappe

16 oz beverage:
2 scoops Big Train Kona Mocha powder
1 oz DaVinci Gourmet Red Velvet syrup
4 oz water
12 oz ice
Add ingredients into blender in order, blend till smooth, pour into cup and serve


You will notice that I took the liberty to make the drink POP a little more. In the picture I actually added milk instead of water, and put the flavoring into the cup, both striking the cup with chocolate, or letting the Red Velvet pour into the bottom. Putting syrup on the very bottom is a lot of fun for a few reasons. One of them being that as you pour from a blender you can pour fast or slow and change the level of color infusion in the body of the blended drink. Kind of like how someone pours latte art and has a dark contrast.

“In honor of Valentines Day I’m calling this the ‘Cold Heart Frappe.'” Said Levi Andersen, the Beverage Product Specialist and in-house Barista for Kerry. “I also wanted to call it something in-tune with how cocktails have amazing names. So I was toying around with ‘Love from a Distance Frappe.’ Because its delicious, beautiful looking, sweet, but its cold as well.”

Also pictured is the Cold Brewed Whipped Cream. Yummmmmmmm. This was 4 oz of cold brew, 1 oz DaVinci Gourmet Madagascar Vanilla, 11 oz heavy whipping cream, charged in a whipped cream dispenser. Have you tried cold brewed coffee in a blended drink before?

Caramel Spiced Apple Chai Recipe

Our Beverage Product Specialist, Levi Andersen, was in the Beverage Suite playing with chai and caramel today. Here is a recipe that he came up with and wanted to share.

Caramel Spiced Apple Chai with green apple and cinnamon

Caramel Spiced Apple Chai

2 scoops Big Train Spiced Apple Chai
14 oz hot water
1 oz DaVinci Gourmet Caramel Sauce
Stir till dissolved

Optional: garnish with green apple slice, a cinnamon stick, or rim your glass with caramel sauce.

“If you don’t already have the Spiced Apple Chai, you can use Spiced Chai and substitute water for half hot water and half apple cider.” Says Levi Andersen. “Or play around with it! There’s a lot of little things you can do to bring out great flavors. Lately I have been dusting cayenne or cardamom powders on the top of seasonal favorites to enhance the flavor.” Talking about home use: “You can actually make a big batch of this recipe in a crock pot if you’re having a party. Just make sure to stir before portioning out a serving.”

Fruity Fit Frappe Protein Smoothie Recipe


You wouldn’t believe how easy it is to make this amazing protein smoothie drink!

The recipe:

  • Fruity Fit Frappe
  • 2 scoops Big Train Fit Frappe Vanilla
  • 6 oz water
  • 12 oz ice
  • Blend all ingredients together
  • Pour half of product from the blend and into a serving cup
  • Add 2 oz frozen berries (we suggest black, blue, and/or raspberries) to blender
  • Re-blend together and pour on top as a layer
  • Optional: top with 1 oz almond meal

Using blackberries and blueberries adds a wonderful depth of color and gives the drink a whole new direction both in appearance and in flavor. Adding the almond meal to the top gives the whole beverage a great crunchy texture on top that can be stirred in. Also you don’t have to worry about nut allergies in your blender, since the almonds never enter the pitcher. Almond meal is a type of grind size, think of it as a mix between chopped almonds and almond butter. The almonds are ground just enough to be chewy but aren’t sticky.

This becomes a great meal in a cup, perfectly suitable for drinking while driving – or something more active.

Cotton Candy Blended Frappe Recipe

  • 1 Packet of Big Train Kidz Kreamz powder drink mix
  • 12 oz Ice
  • 5 oz Water or Milk
  • Whipped Cream (optional)
  • Decorations, sprinkles, etc. (optional)

Pour the water, ice, and Kidz Kreamz mix into a blender. So easy even a kid can make it. Blend for about a minute or so until creamy. Pour mixture into a cup or glass and decorate as desired.

  • 2 scoops Vanilla Fit Frappe Protein Drink Mix
  • ¾ cup water or milk
  • 1½ cups ice
  • Fresh or frozen strawberries (or DaVinci Gourmet Sugar Free Strawberry Syrup) to taste
  • 2 tbsp sugar-free cheesecake pudding mix

Coffee Trade Shows: Big Train Visits St. Louis for Coffee Fest

We were excited to be a part of Coffee Fest, one of the leading tea and coffee trade shows, earlier this month in St. Louis. Coffee Fest has been serving the specialty coffee and gourmet tea industries since 1992 and is viewed by most as the best trade show in America and around the world specifically for those involved with retailing coffee, tea and related products.

If it looks like coffee, smells like coffee, goes well with coffee or is coffee you will find it at Coffee Fest! Everything under the sun that is found in an upscale coffee shop on either side of the counter, including the counter was on the exhibition floor. The best coffee retail education, training and workshops were present to network and learn from each other.


Coffee Fest started out as true celebration of coffee with a consumer coffee show hosted in Seattle in 1992. What began with 65 exhibitors and more than 2,500 attendees sharing coffee with the general public has blossomed into shows that sport more than 300 booths with close to 10,000 attendees serving the coffee trades. The “little coffee show that could” boasts a track record of 16 years and more than 50 shows of consistently and confidently pushing specialty coffee retailers to be the best.

Several members of the Big Train team were on-hand and also participated in the America’s Best Coffeehouse (ABC) Competition. The ABC competition is basically what you’ve seen from town papers like “the best cafe in town.” But, Coffee Fest took this to a national stage and coast to coast. In addition to the completed application, each participating coffee brand must also submit either a three minute video highlighting the coffeehouse, the team members, and the attributes that they believe make them the best coffeehouse in North America, or a picture of the coffeehouse and team members.

Coffee Podcast for Baristas: Audio Cafe

Looking for a Coffee Podcast for baristas or coffeehouse operators? If you love coffee and enjoy listening to podcasts, you definitely want to check out the Audio Cafe podcast!

Hosted by Levi Andersen, aka @boyrista on twitter, this weekly coffee podcast is crafted for people working or in love with specialty coffee. Levi is the Beverage Product Specialist for Kerry (DaVinci Gourmet, Big Train, Oregon Chai, Island Oasis and more brands). He is basically our lead barista – he takes all of the existing products and flavorings and creates on-trend recipes for Big Train products and other Kerry foodservice brands..

He gets to fly to events to speak in addition to hosting customers (like chief executive of some of te largest coffeehouses in the world) who visit our corporate office. Levi also trains sales teams on how to use the products and often joins meetings they have with visitors from large coffee/fast-food/chain/restaurant chains. and make them amazing drinks. He also gets to help develop new products.

Its fun, fast, and challenging, and I love it,  says Levi. Working in the Specialty Coffee industry in general is awesome. There are so many great people who share their knowledge openly because they genuinely love what they do and want to make a lasting difference. Speaking at Coffee Fest trade shows has been a personal highlight.

Levi’s podcast features interviews about brew methods, customer service, staffing, tips and tricks like opening a coffee shop, tea 101, and discovering the best cafes around.

It’s designed to pair with your americano or cappuccino as you learn from the top leaders in the coffee industry. The voices of those who participate include cafe owners, coffee growers, roasters, baristas, managers and chefs sharing real stories and advice.

Levi details what the coffee house podcast is about and why he started it

While working in many different aspects of coffee I kept seeing that people want to connect. There are many great resources our there like magazines (Barista, Roast, Fresh Cup, etc.) websites (Barista, Roast, Sprudge, Barista Exchange, etc) and even now a TV show, Dangerous Grounds. But at the time, there were no active podcasts about coffee. Personally I’ve listened to 1056 hours of podcasts just on my iPhone in 2 years. That’s 44 days of podcasts. And I’m not alone, a lot of people are doing this.

So, I knew there was a need for a coffee podcast, the only question was how should it relate to coffee exactly? Looking at what was out there already was helpful because I didn’t want to do what they were already doing. And I wanted to do something that was an extension of myself and my experiences.

A part of me wanted to talk about what they were covering like café styles, the history of espresso, and black coffee vs having cream, but I needed to make it my own and unique. So I decided to target the people who really need the most help: baristas, coffeehouse owners and managers. And I will speak to them from my own experiences of owning my coffee stand.

If your hands touch coffee, then your ears deserve to listen to this podcast. Many big issues are covered, like water quality’s effect espresso and what that means for the ‘average joe’ and the Single Origin connoisseur. These lessons are worth their own weight in Organic, Fair Trade, Rainforest Alliance, Panama Esmerelda Especial Mario Carnaval green beans.

The podcast has also been transitioning to Google Hangouts as well. These Hangouts are recorded and streamed live. There is also a chat room for attendees to ask questions. After the events, the recorded videos are searchable on YouTube.

Levi plans to host two hangouts per month, with the next one scheduled for April 21st. The last hangout had 8 people, which adds a layer of exclusivity and intimacy. During the last Hangout, the group talked about latte art in cafes along with dos and don’t, why at all, what it means to be a customer, etc.

Some hangouts are geared to consumers while others are geared toward baristas. The last barista podcast was aimed at people who make coffee for customers. The groups shared tips, tricks, and concerns. In the future, Levi plans to type an outline and vision in advance to display the reasons an average coffee drinker may want to attend and watch.

College Packing List: What to Bring to the Dorm

So you’re looking for an awesome college packing list huh? Well, we’ve got a checklist of 20 items you’ll want to bring to the dorm this school year! We have entertainment, organization, health-related, practical and even (gulp) cleaning items. Without further ado…Big Train presents the college packing list that will really help you rock your school year!

1) Internet-Powered Television

Paying for cable TV can get expensive and gathering money from roomies can be a hassle. Cut the cord and go for something like a Roku, Apple TV or Chromecast by Google. All you need is an Internet connection and subscriptions to a few streaming services and you’re good to go!

2) Alarm

Almost every single mobile phone in the past decade includes an alarm clock (and there are even apps that require you to walk at least 30 paces before they shut off), but sometimes it’s good to have a good ol’ reliable alarm clock in the dorm to make sure you don’t miss those early-morning finals!

3) Compact Cooking Appliance

Toasters and toaster ovens are alright but get yourself a 3-in-1 Breakfast Station and master the delicate art of breakfast. Your friends will stare in awe as you toast, griddle and serve up the dark roast – with ONE appliance.

Roomies and neighbors may not appreciate the noise of a blender but they’ll sure love the awesome culinary concoctions you’ll delight them with (see #6). Milk frothers work great for mixing chai right in your mug.

5) Sleep Mask (Bonus: Scented)

Blocking any and all excess light is especially awesome for those mornings when you don’t have class until 10:00 am, but you also never know when you’re cobbled-together blinds (read: blanket held up by tacks) decide to come tumbling down just in time to let all that early morning sunshine come spewing in.

6) Just-Add-Water Drink Mixes

There will be times when food/drinks will be hard to come by, but hopefully you’ll still have access to fresh water. If so, that’s all you need in order to make these delicious drinks:
